Raspberry Almond Crumble Bars Recipe
Ingredients (Makes 9 Bars)
For the Crust & Crumble:

1 ½ cups rolled oats

1 cup almond flour

¼ cup coconut sugar
-
½ tsp cinnamon
-
¼ tsp salt
-
½ cup coconut oil, melted

1 tsp vanilla extract
For the Raspberry Filling:

1 ½ cups fresh raspberries

2 tbsp maple syrup
-
1 tbsp chia seeds
-
1 tsp lemon juice
Step-by-Step Instructions

Make the Raspberry Filling
In a small saucepan, heat raspberries, maple syrup, and lemon juice over medium heat. Stir and mash until juicy (about 5 minutes). Remove from heat, stir in chia seeds, and let cool. -
Prepare the Crust & Crumble
Preheat oven to 350°F (175°C). In a bowl, mix oats, almond flour, coconut sugar, cinnamon, and salt. Add melted coconut oil and vanilla, mixing until crumbly. -
Assemble & Bake
Press ¾ of the oat mixture into a lined 8x8” baking pan. Spread raspberry filling over the crust, then sprinkle remaining crumble on top. -
Bake & Serve
Bake for 25–30 minutes or until golden brown. Let cool completely before slicing into bars.
